Pad See Ewe

If I had a forensic test done on my biological makeup, at least 60% of my body would be comprised of noodles. Pad See Ewe would present 15% of that statistic. This is how I feel about Pad See Ewe – let’s proceed.

This thai dish is actually influenced by Chinese & American tastes and will likely be found on the streets of Thailand. I find it rich, savory, and addictive. A good Pad See Ewe will be brown (from the soy), salty, sweet, perfumed by garlic, supported by broad-flat noodles, and tender Chinese Broccoli. LISTEN, don’t even try this recipe if you don’t have fresh garlic. As said by the late Anthony Bourdain, “Too lazy to peel fresh? You don’t deserve to eat garlic.” You can make this dish with chicken, pork or vegetarian, but a good flank steak will always rise to the occasion.

The hardest ingredient to find will be the rice noodles. This dish will be most complete if you find Bánh ướt, directly translated as wet cake, or Hor Fun in chinese. You can find the optimal noodle at a local asian supermarket. These noodles are the classic, flat noodles and are a bit firmer and thicker.


Pad See Ewe Recipe

Yields: 2 servings

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

1/4 package of Bánh ướt

1-1/2 cup Flank Steak

1 teaspoon of Corn Starch

3 teaspoon of Vegetable Oil

2 Eggs

2 cloves of Garlic

2 cups of Chinese Broccoli

1 teaspoon of Sugar

1 tablespoon of Oyster Sauce

1 teaspoon of Fish Sauce

2 teaspoons of Seasoning Sauce

1 teaspoon of Dark Soy Sauce

2 teaspoon of Spicy Chili Crisp Oil (to taste)

3-4 close Friends to impress (optional)

Prep:

1. Pour yourself a nice glass of white (or red) wine.

2. Clean the Chinese Broccoli and cut them into 2-inch pieces. Separate broad leaf cuts from the stems.

3. Slice flank steak into thin slices. Remember to cut against the grain. Mix corn starch and 1 teaspoon of seasoning sauce, mix well with cut steak pieces, and set aside.

4. Remove noodles from the package and separate noodles apart from each other. This step is tedious and most essential – don’t skip it.

5. Mince fresh garlic. In this step, I like to add another clove because I am a garlic heathen.

6. Combine remaining seasoning sauce, fish sauce, oyster sauce, dark soy sauce, and sugar. Set this mixture aside.

Instructions:

1. Put a wok or nonstick frying pan over medium heat. Add in 1 teaspoon of oil and flank steak, and evenly cook until 70% done. Remove flank steak from the pan and set aside.

2. In the same pan, add in another teaspoon of oil and then add in the stems of the Chinese broccoli. Cook for about 2 minutes, stirring often, then add in the rest of the Chinese broccoli and garlic. Cook for another 1 minute.

3. Next, add in your noodles and stir delicately so noodles can separate without breaking. After this step, add in the sauce mixture and cooked flank steak, and mix carefully with other ingredients.

4. Turn the heat to medium-high and push ingredients to one side of the pan. Add in 1 teaspoon of oil to the open surface and crack two eggs in. Mix eggs together until half-way cooked, while noodles aggressively sear and develop crispy edges.

5. Mix the ingredients in the pan with the eggs and add in the spicy chili oil.

6. Take your dish off the heat and transfer to a plate.

7. Enjoy by yourself or with friends and family.
